Baked Stuffed Shrimp Casserole

Ingredients:
1 1/2 lb large shrimp, peeled, deveined, tails removed
1 cup crushed buttery crackers
3 tbsp unsalted butter, melted
1/4 cup onion, finely diced
2 cloves garlic, minced
1/4 cup celery, finely diced
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp Old Bay seasoning
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
1/4 cup grated Parmesan cheese
1/3 cup seafood stock or chicken broth
Nonstick cooking spray

STEP 1:
Preheat oven to 375°F. Lightly spray an 8×8-inch baking dish with nonstick cooking spray.

STEP 2:
Butterfly the shrimp by slicing down the back without cutting through. Arrange shrimp evenly in the baking dish.

STEP 3:
In a skillet over medium heat, melt 1 tbsp butter. Add onion and celery and cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds.

STEP 4:
In a bowl, combine crushed crackers, cooked vegetables, remaining melted butter, salt, black pepper, paprika, Old Bay seasoning, lemon juice, parsley, Parmesan cheese, and seafood stock. Mix until moist but not soggy.

STEP 5:
Spoon stuffing mixture generously over the shrimp, gently pressing to cover.

STEP 6:
Bake uncovered for 20–25 minutes until shrimp are opaque and topping is lightly golden.

STEP 7:
Let rest for 5 minutes before serving.
