KFC-Style Fried Chicken

KFC-Style Fried Chicken (Crispy & Juicy)
Ingredients

1.5 kg chicken (drumsticks, thighs, or mixed cuts)

Oil for deep frying

First Marinade

1 tsp baking soda

1 tbsp salt

2 tbsp vinegar or lemon juice

Water as needed

Second Marinade

3 tbsp chilli sauce or Sriracha

2 tbsp soy sauce

1 tsp hot sauce (optional)

1 tbsp vinegar or lemon juice

2 tbsp pickle juice (optional)

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp mustard powder

1 tsp red chilli powder or paprika

½ tsp chilli flakes (optional)

1 tsp chicken seasoning

½ tsp MSG (optional)

Salt to taste

Flour Coating

3 to 4 cups all-purpose flour

1 tsp oregano

1 tsp thyme

1 tsp black pepper

1 tsp paprika

1 tsp mustard powder

½ tsp celery powder (optional)

1 tsp chicken seasoning

½ tsp white pepper

½ tsp cayenne pepper (optional)

1 tsp salt

½ tsp MSG (optional)

Cold water about 1 cup

Instructions

1. Wash chicken and make 2 to 3 deep cuts on each piece near the bone.

2. Put chicken in a bowl. Add baking soda, salt, vinegar, and water. Mix well and keep for 30 minutes.

3. Rinse chicken very well under running water and drain completely.

4. Add all second marinade ingredients to the chicken. Mix nicely with hands so all pieces are coated.

5. Cover and keep in fridge for at least 3 hours or overnight.

6. Take chicken out 20 minutes before frying.

7. Mix flour and all flour coating spices in a bowl.

8. Heat oil on medium heat.

9. Coat chicken in flour, dip in cold water, then coat again in flour and press well.

10. Put chicken carefully into hot oil and fry on medium heat until golden and cooked through.

11. Remove chicken and keep on paper towel. Sprinkle a little salt while hot.

12. Serve hot and crispy.
