Ingredients
1 tub (2 cups) fat-free Greek yogurt
1 package strawberry jello (sugar free)
½ C boiling water
½ C ice cold water
12 strawberries (cut in chunks)
1 packet mini marshmallows (sugar free)
Instructions
In a large bowl add the package of strawberry jello.
Slowly pour in boiling water.
Stir well to mix.
Slowly add the ice cold water.
Stir to mix.
Set aside in the refrigerator for about 5 minutes.
Add the Greek yogurt in a mixing bowl.
Using an electric mixer, whisk the yogurt on medium for 2-3 minutes.
Slowly start pouring the thickened jello into the yogurt, continuing to whisk
for an additional 2-3 minutes.
Keep whisking for about 5-10 minutes more. (Or until the mixture has doubled in size and is light and fluffy.)
Carefully fold the strawberry chunks into the jello.
Carefully fold in the mini marshmallows into the jello.
Transfer the bowl into the refrigerator for a couple of hours.
Before serving, spoon the jello into small ramekins.
Return the ramekins to the refrigerator until ready to be served.
Garnish with strawberry chunks and mini marshmallows.
